I have a queen size pillowtop matress and want to find sheets that actually fit. What is the average inch to get? I found some that would fit a 14-15" deep matress, would that work?

Get a deep pocket sheet set. Then get some sheet suspenders:

I used to use these when I was in the Marines, and my bed was always tight enough to bounce a quarter off of. So, on our queen sized bed with a pillow top, we got deep pocket sheets, but they are slightly loose and at first the fitted sheet came up out of the corner, etc… Then I remembered about using these…. And whaddya know… Bed is tight enough to bounce quarters off of… lol…
But just look for some Deep Pocket sheets, and get some sheet suspenders.
depends on how thick you actual matttress is. Measure your mattress and that will give you an Idea of the minimum depth you should be looking for. Each mattress is different. mine for example I have to order extra deep sheets as it is 18 inches.
Measure the mattress from pillow top to bottom. Mine is 20", so its important to know ahead of time.
